Potatoes stuffed with herring.
200 g (7 oz) potatoes, boiled, drained, peeled.
20 g (1 oz) salted herring, drained, fillet, minced.
1 onion, finely chopped.
1/2 egg, beaten.
salt, ground pepper to taste.
2 tbsp sour cream.
1 tbsp butter.
1 tbsp chopped parsley.
1 tbsp chopped dill.
1. Cut the top of each potato and scoop out the pulp. Set aside.
2. Blend potato pulp with herring. Add onion and egg. Flavour with salt and ground pepper. Put the mixture into each potato.
3. Place potatoes into baking tin greased with butter, pour over sour cream. Sprinkle with chopped greenery. Bake the potatoes in a 425 degree oven. Serve immediately.
