Okroshka with carrot - Cold Soup.
Okroshka is Cold Soup.
2 carrot, washed, boiled, peeled, cubed, cold.
2 potatoes, washed, boiled, peeled, cubed, cold.
250 g (8,8 oz) - fresh cucumber, cubed.
100 g (3,5 oz) - green onion, chopped.
2 hard-boiled eggs, chopped.
5 - 7 chopped radishes.
1,5 litres (3 pint) - kvass.
50 g (2 oz) sour cream
Chopped green Celery, dill, parsley, salt, sugar to taste.
(I put 1 tsp sugar for 1,5 litres of kvass)
1. Put potatoes, carrot and cucumber into big bowl.
2. Add chopped eggs, green spring onions, radishes and greenery into this mixture.
3. Pour kvass and add salt, sugar, stir well. The okroshka is ready. The proportions can be altered and okroshka gives a lot of scope to inventive cook.
4. Serve with sour cream.
