Okroshka with wild rose fruits
- Cold Soup.
5 tbsp wild rose fruits, dried, crushed.
5 fresh cucumbers, chopped into strips.
4 tbsp green onion, chopped.
2 hard-boiled eggs, chopped into strips.
1,5 litres (3 pint) - water.
50 - 100 grams (2 - 4 oz) sour cream or cream.
Chopped green Celery, dill, parsley, salt to taste.
1. Put crushed wild rose fruits in to boiling water. Boil 1 - 2 minutes. Take away from the heat. Place in the warm spot. Or pour into thermos and leave for 3 - 5 hours. Chill.
2. Put cucumbers, green onion and eggs into big bowl. Mix.
3. Strain and discard wild rose fruits. Pour the drink into bowl with mix, add chopped greenery and salt, stir well. The okroshka is ready. The proportions can be altered and okroshka gives a lot of scope to inventive cook.
4. Serve cold, topping each bowl with a spoonful of sour cream
