Apples stuffed with carrot.
3 - 4 apples, washed, cored.
For stuffing:
200 g (7 oz) carrot, washed, peeled, grated.
30 g (1 oz) cucumber, marinated, finely chopped.
10 g (1/3 oz) oil.
20 g (0,7 oz) honey.
1 tsp lemon juice.
parsley leaves to taste.
Method:
1. Combine all ingredients for stuffing.
2. Cut top of each apple, take core away. Scoop out the seeds and discard them. Scoop out some pulp. Fill apples with the stuffing mixture.
