Rye bread Kvass - Cold beverage.
Description:
In old Russia there were known to be enough beverages. Kvass was drunk by the
whole population from tsar to commoner. besides ordinary kvass was also brewed
different sorts of mead kvass and berry kvass.
Foreign travellers in old Russia praised most famous Russian beverage.
Kvass and okroshka are great for summer.
Russians drink kvass. It is a cold beverage.
Okroshka is Cold Soup, we use kvass preparing it.
Ingredients to make Kvass:
6 litres (12 pint) - water
1 kg (2 lb) - rusks
30 - 40 grams ( 1oz or 1 1/2 oz) - sugar
20 grams (1 oz) yeast
50 g (2 oz) raisins
Method:
1. If you want to try real kvass, you need rye bread or rye rusks, yeast and sugar.
Crush the rye rusks or rye bread dried in the oven, put it in big saucepan, pour boiled
hot water, mix, cover and leave for 3-4 hours in a warm place, stirring from time to time.
2. Strain and discard rusks, add into liquid the sugar and yeast, dissolved in a small amount of warm boiled water, mix and leave for 7 - 12 hours.
3. When the kvass begins to foam violently, strain it again. Pour kvass into sturdy bottles, add 3- 5 raisins into each bottle, cork tightly, and after 2-3 hours at room temperature, put them in the fridge. After 2-3 days the kvass will be ready to drink.
4. Kvass should be served with ice.
