Mushroom Salad - caviar
with vegetables. (Canned)
(We make this Salad in September for winter time)
Ingredients:
750 g cabbage, cored and shredded.
250 g onion, chopped
750 carrot, grated
500 g cucumbers, cubed or grated
250 g paprika, chopped
850 g mushrooms, boiled, chopped
500 g tomatoes, minced
0,5 liter olive oil (or Vegetable oil)
1 tsp vinegar (75 - 90 %)
2 tbsp salt
1,5 tbsp sugar
bay leaf
Method:
1. Bring to boil the oil.
2. Add grated carrot. Simmer 10 - 15 minutes. Add remained vegetables. Simmer
40 - 50 minutes.
3. Add salt, sugar, bay leaf, vinegar and mix.
4. Simmer 5 - 10 minutes.
5. Ladle hot vegetables into hot sterilized jars, pack the mixture. Seal.
