Tomatoes stuffed with mushrooms.
10 ripe tomatoes, deseeded.
parsley leaves.
For stuffing:
500 g (1,1 lb) mushrooms, boiled, chopped.
4 tbsp mayonnaise.
2 tbsp butter.
2 onion, finely chopped.
salt, ground pepper to taste.
Method:
1. Cut the top of each tomato. Take away seeds. Set aside.
2. Simmer boiled mushrooms with butter. Add onion, stew. Chill and mix with mayonnaise. Flavour with salt and ground pepper. Put the mixture into each tomato.
3. Decorate the stuffed tomatoes with parsley leaves and serve.
